I came across this recipe late last night and decided that I had to have it for lunch today. I picked up the items at Whole Foods and it took less than 5 minutes to prep & put this together just now. I took one bite already and I am in heaven! However, my sandwich did not turn out as pretty as the one one the blog I got this recipe from (Cheeky Kitchen) so I borrowed the pic above from there! 1/3 cup Vegenaise (or mayonnaise)
2 tablespoons chopped fresh basil
1/2 lemon, zested
Fresh ground pepper
4 slices good bread, toasted
1 super ripe tomato, sliced thin
1 avocado, pitted, peeled, and sliced thin
8 slices vegan bacon, cooked until crisp
1/2 cup broccoli sprouts
Stir together the Vegenaise, basil, lemon, and pepper.
Pile tomatoes, avocado slices, bacon, and broccoli on top of each sandwich.
Top with an absurd amount of the basil-spiked Vegenaise.
Serve immediately and enjoy!
